DESCRIPTION

Pink Bourbon Washed is a coffee process that combines the exotic Pink Bourbon variety—a natural hybrid between red and yellow Bourbon, characterized by its pink-colored cherries—with a traditional washed mill, designed to highlight the cleanliness and complexity of the cup profile. In this method, ripe cherries are depulped, fermented under controlled conditions, and carefully washed to remove mucilage before drying.

Flavor and Aftertaste

On the palate, the profile is floral and fragrant, with defined flavors of chamomile, light yellow fruits (such as peach and loquat), and a delicate sweetness reminiscent of floral tea. The acidity is citric and bright, perfectly integrated with a silky and balanced body, creating a clean and elegant sensation on the palate.

FERMENTATION

A 48-hour controlled fermentation is carried out, designed to enhance aromatic expression and cleanliness in the cup. After fermentation, the beans are carefully washed to remove mucilage, preserving the delicacy and complexity of the varietal. The result is a refined, balanced, and elegant cup, with great clarity and expression of origin.
