This specialty coffee presents a complex, fruity, and consistently sweet profile, the result of carefully controlled natural fermentation. The process seeks to highlight caramel textures and a sensory palette reminiscent of red and purple berries. Its development during drying, carried out on wooden beds for 30 days, allows for the development of alcoholic notes and a clean, long-lasting finish, with a hint of milk chocolate.
Flavor and Aftertaste
In the cup, this coffee offers elegant acidity with a caramelized texture that balances bright fruit flavors. The dominant notes evoke ripe berries, combined with a lingering aftertaste of fine chocolate and a subtle tartaric note, providing freshness and complexity. The finish is clean, sweet, and persistent.
FERMENTATION
This coffee underwent anaerobic fermentation for 72 hours under controlled conditions to promote the expression of fruity aromatic compounds and natural liqueurs. This approach allows for a complex sensory structure, enhancing sweetness, clarity, and a balanced body.
