DESCRIPTION

This coffee is a variation on washed coffee with double anaerobic fermentation for 96 hours, with and without must. This method brings out a creamy and fruity sweetness, enhancing the citrus notes and silky texture. Drying on African beds for 15 to 20 days preserves its clean and complex profile.

Perfil Sensorial

Intense and complex aromas featuring fresh citrus notes such as mandarin and orange, accompanied by ripe cherry. The fragrance is sweet and fruity, with subtle nuances of chocolate, nuts, and almonds that intensify when ground.

FERMENTATION

It undergoes a controlled double anaerobic fermentation lasting 96 hours, which enhances the coffee's fruity flavors and aromatic complexity. The addition of must in one of the stages allows for greater extraction of sugars and aromatic compounds, resulting in a more expressive profile.
